Festive jellies for a very Merry Christmas!
I can’t believe tomorrow is Christmas Day! If anyone is looking for something simple to serve to family and friends over the next few days then I’d highly recommend you give these Prosecco, elderflower and berry jellies a try.
I made a trial batch of these festive jellies by Jamie Oliver last week and they turned out really well. There is very little preparation work required and the finished result has a certain wow factor.
These jellies are lovely and light served by themselves, but also taste great with a scoop or two of vanilla ice-cream. I particularly love how the jelly captures the Prosecco bubbles inside when it sets, which are then released in your mouth in an unexpected fizz with each spoonful.
You can find the recipe to make these festive jellies here. The recipe serves 10. All you’ll need is:
- 8 punnets of berries (I used blueberries and raspberries)
- 4 gelatine leaves
- 140 ml elderflower cordial
- 2 tbsp caster sugar
- 425 ml Prosecco, chilled.
